做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左(zuǒ )右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后(hòu )转中(zhōng )火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
