做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱(cōng )切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅(guō )盖大(dà )火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖(mèn )。
