做法:春笋切成(chéng )片后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生(shēng )姜、春(chūn )笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖(gài )上锅盖焖。
