做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱(cōng )切成(chéng )段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
