做(zuò )法:春(chūn )笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候(hòu )加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
