做法:春笋切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀(yún ),加(jiā )入少量清水(shuǐ )半掩住春(chūn )笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入(rù )盐,翻炒均(jun1 )匀(yún )稍收汁(zhī )时盖上锅盖焖(mèn )。
