做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开(kāi )后转中火。煮到(dào )水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收(shōu )汁(zhī )时盖上锅(guō )盖焖(mèn )。
