做法(fǎ ):洗净宰好鲫鱼(yú ),洗净淮山(shān )和(hé )薏(yì )米。用清水把陈皮泡软,拍裂一(yī )小块(kuài )姜,热锅,用姜(jiāng )块(kuài )在(zài )锅上擦一遍(biàn ),放两勺(sháo )油,待油六成热下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其(qí )他材料,武火煮沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
