做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上锅(guō )盖焖。
