做法(fǎ ):春笋切成片后加少(shǎo )许盐捞(lāo )出后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中火(huǒ )。煮到水快熬(áo )干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
