做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
