做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的(de )鲫鱼和(hé )其他(tā )材料,武火煮沸(fèi ),转中小火煲(bāo )一(yī )个半小时(shí ),下盐调味即可品尝。
