做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁(zhī )时(shí )盖上锅盖(gài )焖。
