做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩(yǎn )住(zhù )春笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
