做法:春笋切成片后加(jiā )少许(xǔ )盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖(mèn )。
