做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻(fān )炒1分(fèn )钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量(liàng )清水半掩(yǎn )住(zhù )春(chūn )笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
