做法:洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块(kuài )在锅上擦一遍,放两(liǎng )勺油,待油六成热(rè )下鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和(hé )其他(tā )材料,武(wǔ )火煮沸,转中小(xiǎo )火煲一个半小时(shí ),下盐调(diào )味(wèi )即可品尝(cháng )。
