做法:春笋(sǔn )切成片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生(shēng )姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
