做法:春笋(sǔn )切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
