做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后(hòu )转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
