做(zuò )法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
