做法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸(jìn )泡,生(shēng )姜(jiāng )切(qiē )片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
