做法:春笋切成片后加少许盐(yán )捞出后(hòu )用清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍(shāo )收汁时盖(gài )上(shàng )锅盖(gài )焖。
