做(zuò )法(fǎ ):春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖上锅(guō )盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
