做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖(gài )焖。
