做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的(de )时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
