做法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一(yī )小块姜,热锅,用(yòng )姜块在锅上擦(cā )一遍,放两勺油(yóu ),待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其(qí )他(tā )材料,武火(huǒ )煮沸,转(zhuǎn )中小火煲一个半小时,下盐调味(wèi )即可品尝。
