做(zuò )法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
