做法:洗净宰好(hǎo )鲫鱼,洗净(jìng )淮(huái )山和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦(cā )一遍(biàn ),放两(liǎng )勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个(gè )半(bàn )小时,下盐调味(wèi )即可品尝。
