做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜,热(rè )锅(guō ),用姜块在(zài )锅上擦一遍,放两勺(sháo )油(yóu ),待油六成热(rè )下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他(tā )材料(liào ),武火煮沸,转中小火煲一(yī )个半小时,下盐调味即可品(pǐn )尝。
