做法:春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖(mèn )。
