做法:春笋切成片后(hòu )加少(shǎo )许盐(yán )捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅(guō )盖大(dà )火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
