做法:春笋切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮开后转中火(huǒ )。煮到水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖(gài )焖。
