做法:春笋切成片后(hòu )加少许盐捞出后用(yòng )清水浸泡(pào ),生姜(jiāng )切片,葱(cōng )切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后(hòu )转中火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
